Alright, it's time to improvise! It is winter out there and I’ve been craving for a bite of summer. That’s when it hit me, blueberry and lemon cookies. There is something about sweet blueberries and the refreshing scent of lemon that screams sunshine.
Having these elements enveloped into a nice, warm, and chewy cookie just makes it the perfect treat for the winter season. If you love blueberry muffins and lemon loaves then you’re going to love these cookies! Unlike a raisin cookie, these blueberries are not dried so these give off delicious jam-like texture that pairs well with the bright, tart lemon. It literally is summer in a bite!

Blueberry and Lemon Cookies
Ingredients:
A burst of summer:
1 cup frozen blueberries
Zest of half a lemon
Juice of half a lemon
The foundation to every cookie:
1 cup all-purpose flour
1/4 tsp baking soda
1/8 tsp salt (a pinch)
1/3 cup unsalted butter, melted
1/3 cup white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
Instructions:
1. Preheat the oven to 350°F or 180°C.
2. Toss the blueberries with the lemon juice and set this aside.
3. In a bowl sift the flour, baking soda, and salt. This is your dry ingredients, set this aside.
4. In a larger bowl, add in the melted butter, brown sugar, and white sugar. Mix until well combined.
5. Mix in the vanilla extract, lemon zest, and eggs with your butter and sugar mixture.
6. Add in your dry ingredients into the bowl and use the spatula to mix the ingredients until it is just blended.
7. Mix in your blueberries and lemon juice mixture and scoop it unto the baking sheet lined with parchment paper.
8. Bake for 12-15 minutes and let it cool on the tray for a few minutes before placing the cookies on a cooling rack.
9. Enjoy a little taste of summer!
